Keeping little ones away from sugar-laden desserts and treats can be a big challenge. There's also a little big of guilt that comes with not letting my toddler son enjoy ice cream or cake at family get-togethers. But I shouldn't feel guilty - after all, there's no nutritional value to sugar, so I'm not withholding anything good from him. But who doesn't love a little sweet treat??
My husband and I are currently in the middle of a sugar-free, gluten-free challenge for the duration of Lent. It's more my thing than his, but he helps keep me accountable! I reached out to a friend who is always sugar-free and gluten-free (and raises her two boys this way) asking for some tips and inspiration. She shared this easy homemade ice cream recipe with me. It was so simple, I had to try it!
This sugar-free strawberry banana ice cream took only a matter of minutes to whip up in my blender and proved the perfect dessert after our homemade tacos tonight! Not only that, but J-man gobbled up his portion and I didn't have to feel guilty watching him do so, or worry about the sugar crash he would have later. It's so good and so easy it's sure to be a staple dessert in our home in the months to come as well!
All this recipe requires is bananas, strawberries (or other fruit), milk, vanilla, and a high-powered blender or food processor. To make prep even easier, I chopped up the bananas the night before and threw them in the freezer. The result is a creamy, naturally-sweetened dessert that is just as good as any frozen yogurt, in my opinion. If you're feeling fancy you could top it with shredded coconut, nuts, dark chocolate, or whatever you like!
