Gluten-Free Cauliflower Pizza Crust

Who doesn't love pizza? Especially when it's fresh and homemade! Kids and toddlers often love pizza - but conventional pizza, frozen pizza, or take-out pizza is usually greasy, carb-heavy, and not very nutritious. But it doesn't have to be!

Lately I've been a bit obsessed with making pizza. Last September my husband and I challenged ourselves to go gluten-free and sugar-free for the month  and every Friday night we had a family pizza night and I tried making a different gluten-free crust alternative each week. I really enjoyed the challenge and my husband and son enjoyed the results! After all, what toddler doesn't love pizza! At the time J-man called pizza "papa" (one of about six words in his vocabulary at the time that he called "papa" - including pancakes and his grandpa). Now he can properly say "pizza" and it's the cutest thing when I tell him we're having pizza for dinner and he goes around asking "Pizza? Pizza?" Tip: try to avoid telling your toddler what's for dinner, or breakfast, or lunch for that matter, until the food is actually ready and on the table - otherwise they'll just keep asking for it for as long as it takes you to prepare the meal! I've made this mistake many times!

Of the different gluten-free pizza crusts I tried that month, the cauliflower crust seemed the most daunting to me - it seemed there was so much that could go wrong, not to mention it seemed really labor intensive! But I tried, and learned a lot from it, and even adapted the recipe to make it simpler, and healthier. The result was delicious! So delicious, I've made it twice the last two weeks!

During our sugar-free month I was also shocked to see the hidden sugar in so many foods and condiments - and pizza is no exception! You'd be surprised how many store-bought pizza sauces have sugar in them! So if you're trying to go sugar-free (which we try to do with our children) making your own from scratch is key. Description

This gluten-free cauliflower pizza crust is a healthy alternative to traditional pizza crusts. It's easy to make, low-carb, and perfect for anyone on a gluten-free diet!

  1. Prep: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Make "rice": Rinse cauliflower, remove the outer leaves, separate into florets, and chop into smaller pieces. Process in a food processor in batches until "rice" texture forms.
  3. Cook "rice": Transfer riced cauliflower to the prepared sheet pan and bake for 15 minutes, or microwave in a microwave-safe bowl for 8 minutes. Let it cool for 10-15 minutes.
  4. Squeeze: Transfer cooked cauliflower into cheesecloth or a kitchen towel and squeeze out excess moisture. Be patient and do this multiple times until barely any liquid comes out.
  5. Make dough: Increase oven temperature to 425°F (220°C). In a large bowl, add the dry cauliflower, egg, Parmesan cheese, Italian seasoning, almond flour, flax seeds, salt, and pepper. Mix well until combined.
  6. Form crust: Line a baking pan or pizza stone with parchment paper. Transfer cauliflower dough onto the pan and flatten with your hands to form a thin crust.
  7. Bake it first: Bake the crust for 18-20 minutes until it’s golden brown on the edges. Keep an eye on it to ensure it doesn’t burn.
  8. Bake pizza with toppings: Top the crust with your favorite toppings and bake again for 5-7 minutes until the cheese is golden brown.
  9. Cool and serve: Let cool for 1-2 minutes, slice into 8 pieces, and enjoy!

Notes

Special dietary requirements: This recipe is gluten-free, low-carb, and can be made dairy-free by substituting the Parmesan with a dairy-free cheese.
Storage: This cauliflower pizza crust is best served fresh. If storing, keep in the fridge for up to 2 days. You can also freeze the crust for up to 3 months.
